Team

Today we are a team of 6 people, with operations in Mexico City and Puebla, Mexico. We have the expertise necessary to scale-up the technology and solve all production and operations issues. We are 3 full time cofounders, 1 full time scientist, 1 full time marketing director, 1 full time community manager and designer. We also outsource all design related tasks to a publicity agency.

Two of the cofounders, Lorena Pedraza and J, invented the biorefinery process for obtaining xylitol from agricultural wastes. Lorena is an academic with over 25 years of experience in scaling-up fermentative processes, while Javier used to create new flavours and ingredients while working for Unilever and BASF. The third cofounder, Isabella Fernández takes care of operations. She has experience in bringing new products to market while working for Sabormex.
