Developing and promoting local agricultural resources is a major economic, nutritional and social challenge in Benin today. Pumpkin (Cucurbita pepo) and plantain (Musa paradisiaca) are locally available raw materials with important nutritional qualities that can contribute to food security and reduce dependence on imported wheat flour. The present project aims to contribute to the valorization of these local resources through the production and marketing of a gluten-free cake based on pumpkin (Cucurbita pepo) and plantain (Musa paradisiaca) flours.
