The processes of economic development have led to changes in the consumption habits of food and comfort goods. This transformation has accelerated from globalization since the late twentieth century. In other words, the most remote corners of the planet are in a process of homogenization of consumption.
In particular, in certain communities on the margins of the economic poles, it has been documented that this process led to effects on health, the environment, and social, economic and cultural spheres.
This project incites to reflect on the importance of the processes of consumption and local production and seeks to understand the impacts that the transformation of consumption habits caused in the communities to the margin of the economic poles. The quantitative and qualitative manifestations of the transformation of consumption habits to co-create trajectories for local endogenous development based on biocultural processes will be analyzed.
