I transform Wagashi cheese, a popular dairy product in Benin, into a seasoned and dried version that is more sustainable, hygienic and ready to eat. My business addresses a key problem: the short shelf life of fresh cheese and post-production losses among small-scale producers. Thanks to a dehydration process, my product does not require refrigeration, which facilitates distribution in both rural and urban areas. The target market includes urban consumers, students, supermarkets and health food stores. The potential is great, as it combines tradition, innovation and eco-responsibility, while supporting local agriculture and food security.
