Cal y Maíz We make artisanal products of native Mexican maices; nixtamal, masa, tortillas, tlacoyos, gorditas, etc. We have products of very high quality and natural colour, with no preservatives or artificial flavorings. We pay fair and differentiated prices and encourage cultivation with agro-biodiverse practices such as milpa. We intend to extend the practices and give a good reason to the new generations of working the field. We help to preserve the genetic diversity of the more than 60 varieties of corn and their continuous co-evulution under domestication that we have had in Mexico for 10,000 years.
