The World Health Organization ranks cardiovascular diseases (CVDs) as the leading cause of human death worldwide. These CVDs cost the lives of 17.7 million people each year, or 31% of all deaths worldwide. The major causes of cardiovascular disease are tobacco use, physical inactivity, harmful use of alcool and an unhealthy diet. This last cause is mainly due to a dietary deficiency of polyunsaturated fatty acids (EPA & DHA) that are not synthesized by the body and must be provided by the food ration. The seriousness and the frequency of cardiovascular diseases in the world in general require to prevent them on the one hand and to treat them on the other hand. Prevention is done by controlling cardiovascular risk factors and introducing foods rich in polyunsaturated fatty acids into our citizens’ food intake.
