We started out as a cafe and soon added in our organic rooftop garden, fruit orchard and chicken coop–not to mention composting and creating a closed ecosystem. Then we took the money we made in the first few years and invested in land to build a nature reserve and farm olive trees. Next we added in fair trade handicrafts, including the olive oil and honey from the land, to help pay the cost of conservation work. On top of all of this, we always foreground education–through our menu, social media, workshops, and more. Ultimately, all three “projects” (cafe, handicrafts and the land) support each other and work together for one greater goal–sustainable consumption in Palestine.
