Smoked fish in Benin have a short shelf life of two days, are not packaged and are exposed to various pathogens that affect their quality, posing a risk to human health. To counteract this challenging issue, Benin AgroTrans decided to employ an improved processing technology which has significantly increased the shelf life by 10 days and improved all quality attributes. Despite the abundance of ordinary smoked fish on the market, our product stands out of this competition by its higher sanitary quality, lengthy shelf life and improved handling quality.
