Postharvest losses have been a constraining factor in plantain production. Plantain suffering high postharvest losses during the bumper season due to inadequate demand or ready market. Statistics have shown that at least 30 percent of farm produce estimated at $700,000 is lost annually through post-harvest losses, a situation which reduces incomes of farmers.
Kaklo is a delicious traditional Ghanaian snack made from ripe plantain. Although kaklo is a delicacy in Ghana, it is going extinct due to the laborious process in preparing it. With Consumers demand for convenience and ready to prepare foods, through research and development, we developed a ready to have Kaklo mix that not only saves time for the consumer but reduces the drudgery process in kaklo preparation, provide a source of food security to the nation and provide employment opportunities to a vast majority of the youth.
